Vegatarian Recipes - Date Cake
Date Cake Ingredients: 18 x Dates 3/4 cup of Milk 3/4 cup of Sugar 1 cup of All purpose flour (Maida) 1/2 cup of Oil 1 tea spoon of Baking soda 1 tbl spn of Cashews, walnuts(optional) Note: If you use 'baking powder' instead of 'baking soda', cake becomes a bit harder. "Pitted baking dates"(2 table spoons) is used for baking this. So when you try with the normal dates, the colour might come out different. Method: Soak the dates in warm milk overnight. Remove the seeds. Add sugar and grind them to a smooth paste. Add oil and mix. Sieve together flour and baking soda. Add the flour one table spoon at a time and mix slowly. Add the nuts and mix. Preheat the oven at 350F. Bake the cake in a greased oven proof dish for 35-40min (or till a knife inserted in the cake comes out clean). With normal dates and baking soda (instead of baking dates and baking powder), it comes out very dark and moist like chocolate cake. Taste wise, it is better. |
